Zuccini and Ham Salad

Easy Summer Salad:

two fresh zuccinies
thick slice deli ham (3-4 slices)
small bag pecan pieces
1/4 cup basalmic vinegar
olive oil
dijon mustard (1 teaspoon)
thyme (to taste)
salt (to taste)
pepper (to taste)

Cut zuccini in half length wise, then cut each half length wise into thirds. Then chop along the length into 1/4 or 1/2 inch pieces and put into a large bowl. Cut the deli ham into tiny pieces and add to bowl, then sprinkle with pecan pieces. For the dressing, add vinegar, oil, mustard, salt and pepper together in a small bowl and whip briskly with a fork or wisk. Pour dressing on salad and mix. Add thyme to taste. Salad can be left in fridge to marinate or served immediately.

love the thought of adding the pecans.
